    Our shares come in 2 breakdown options: The "Home Chef" Breakdown (more cuts and roasts) breakdown is described below with total weights and portion sizes. Each cut is individually portioned, labeled and sealed for your convenience. 

    Requires ~ 13 cubic feet of freezer space. Flexible pick up scheduling. We can store for you and you can pick up by the 1/4 at dates of your choosing. Pick ups must be scheduled one week in advance. 

    The Home Chef! (more cuts and roasts):

    ~ 48# of premium roasts including chuck and brisket roasts. 3 lb portions. 

    ~ 8# of whole muscle steaks including 2 tri tips and 2 coulottes (aka picanhas). whole muscle portions. 

    ~ 12# of hidden gem steaks including denver, flat iron, chuck eye, and teres major steaks. 12 to 16oz portions. 

    ~ 30# of center cut steaks including: 16 ribeyes, 12 new york strips, 8 filets. Filets are 8oz, NY Strip and Ribeye are 12oz portions. 

    ~ 8# of "flat steaks" including flank steak, bavette steak, skirt steak, and hanger steak. Whole muscle portion. 

    ~ 8# of top sirloin. 16oz portion

    ~ 30# of Nose to Tail goodness including beef suet (tallow), beef bones, beef tongue, and sliced beef liver in retail (small) packs.
